Recovery Food...Eggs

Most times when I get home from a run I make myself some sort of smoothie with protein, etc. But shortly after, I crave food and want something salty and with substance. So what do I go to...eggs. Usually I just make some sort of veggie/egg omelet but I wanted to give you a few other recipes for you to try!

 
 
Ranchero Egg Skillet
4 Servings
 
4 tortillas (I use a corn tortilla or sometimes wheat bread)
4 eggs (I use 2 eggs, rest egg whites beat together)
2 cups Black Beans
1/2 Onion (diced)
1 tsp Minced Garlic
2 Tomatoes (Diced)
1 tsp Cumin
1 tsp Coriander
1/2 tsp Chile Powder
1/2 tsp Paprika
1/2 tsp Salt
Dash of Pepper
2 T Water
Olive Oil
1 Avocado (Sliced)
2 T Cilantro (Chopped)
1 Lime (Cut into Wedges)
1/2 C Cotija or Feta Cheese (optional)
 
Optional Additions:
Bell Pepper, Zucchini, Mushrooms, Kale
 
Preheat Oven to 400. In a pan, sauté onion and any additional veggies together until tender. (About 5 minutes). Add garlic & sauté for a min or two. Add 1/2 tomatoes (leave other half to top eggs with) and black beans, spices & water. Let simmer on med low for a few mins. Stir occasionally.
 
In a cake pan, place the bean/veggie mixture in the bottom. Poor the egg mixture evenly over the bean/veggies. Sprinkle with salt and pepper. If you want, sprinkle cheese over the eggs. Place in the oven and cook for 10-12 mins and then check. Cook until the eggs are cooked to your desire.
 
Serve placed on a tortilla.

Serve with Avocado, Lime, Cilantro and fresh Tomatoes.

Egg White Souffle
Serves 12
 
1 Pepper (Diced)
1 Zucchini (Diced)
1 Onion (Diced)
1 C Broccoli
1 C Spinach
1 C Mushrooms
1/2 C Turkey or Ham Diced
14 Egg Whites or 20 T Egg White Mixture
Salt & Pepper
Avocado
Salsa
 
Preheat oven to 375. Grease a Muffin Tin.
Saute Veggies together for about 5 mins until tender. Salt & Pepper to Taste.
While the veggies are cooking, place egg whites in a bowl and whip to a medium peak.
Mix veggies into egg whites.
 
Place an even amount in each muffin space (makes 12). And cook for about 20 mins. or until your eggs are cooked to your desire.
 
Top with Avocado and salsa! Enjoy!!
 
 
Whenever I choose to make one of these, I will make an entire batch and I have enough to last me through the week!! These are just to mix up the regular egg omelet and keep things interesting. They are both very healthy, filling and so so yummy!!!!
